The Distillerie d'Isle de France is the creation, by three passionate friends, Antonin, Olivier and Michaël, of an artisanal and creative distillery on a farm in Seine et Marne.
Our goal: to create a range of original spirits and premium quality in short circuit, and privileging bio diversity, conservation agriculture and local development!
From the field to the bottle !
Our raw materials will for the most part be produced directly on the farm by Olivier in conservation agriculture.
The goal: to become self-sufficient and to control the entirety of the production and therefore the quality of the ingredients of our spirits.
Barley, corn, rye, and even beet grown on the farm, will be used in the development of our products. We are keen to plant old varieties to diversify our crops.
In addition, an orchard and a botanical garden have been planted for a year on the farm to give fruits and plants that will enhance our creations.
Olivier, owner of the farm and farmer in conservation agriculture, will do everything to ensure that the product is premium quality.
In an effort to be ever more resilient to hazards, to improve biodiversity and to provide the distillery with berries that will enter the compositions of gin and liqueurs, He has already planted 11 hectares in agroforestry: they are trees planted directly in the fields of cereals, to offer you a real continuity of the field to the bottle.
Moreover, for every purchase of bottles during this campaign, we commit ourselves to plant an additional tree in our orchard or in the fields of the farm in order to become self-sufficient as soon as possible
Unfortunately, sugar cane does not yet occur in the Paris region, which is essential for the production of rum. It will be imported and distilled on the farm. Michael, with his experience and his many trips to find the best mills, selects the best.
Who is the Distillerie d'Isle de France ?
The Distillerie d'Isle de France is above all a story of friendship, sharing of knowledge and love of the good product. A project we have been working on for more than 2 years
A childhood friendship between Olivier and Antonin, a friendship built around a passion for spirits between Mika and Antonin, a new friendship between us three around this project
A sharing of knowledge, Olivier for the production of the main raw materials, product sourcing and close relationship with the earth and especially respectful of it, Mika for his expertise in spirits and his infallible nose, Antonin for his knowledge of the web and online communication.
Our means of production
Our Stupfler® Alambic.
After attending trainings at the International Center of Spirits in Cognac, having met with several professionals, specialists in the creation of spirits for big houses, after obviously taking the care to taste the spirits that came out. Our choice naturally fell on the Stupfler® house located in Bègles.
Stupfler® creates world-unique stills, sold on several continents, and recognized worldwide for producing the finest alcohols.
Their know-how combined with innovation and creativity has produced the very best in the world of distillation and it is the image of what we want to do all 3.
A bicentennial farm
The family farm Flé was built in 1760, it is the castle farm that belonged to the Countess of Segur. This farm is steeped in history and has a tithe barn, a nod to history to our customs friends.
Several buildings could have lent to the distillery, the choice of a barn of reasonable proportions, rather than the tithe barn is economic, but we look forward to aging our best casks.
We have already done all the renovation of this barn to create our distillation and fermentation room, and our laboratory.
If we reach our goal we will be able to build a second barn in cellars in order to be able to age more spirits.
Le Gin and Botanical Spirits
In recent years, gin has created a whole bunch of spirits called gin that do not mention its main ingredient: the juniper
In order to make gin find its origins, we initiated the planting of junipers on the farm, in order to be self sufficient as quickly as possible, and to produce our own berries.
All this to offer you a gin made in the rules of art for both amateurs and neophytes.
And as we want to vary the pleasures and adapt to the seasons, we will develop limited series called "Botanical Spirits".
The birth of Isle de France whiskey or Malt Francilien.
Produced from barley, corn and rye from our farm.
The grains are then malted and brewed in a brewery a few kilometers from the distillery, to be distilled and put in barrels at home.
The Whiskey of the Distillerie d'Isle de France wants different from the classic whiskeys because of the origin of the grains but also by its recipe and its breeding in dry cellar.
We want through this product to give a strong identity to our agricultural region and our terroir.
Aged in oak barrels of different origins, new and / or second hand then stored in the barn of the farm, whose qualities in terms of regulation of climatic variations are no longer to prove. This storage will allow a smooth aging to give wood and whiskey time to marry to perfection.
The rums of Isle de France
- White Rum
The idea is to propose rums perfectly balanced between power, aroma and persistence with also a good mixability so that you can indulge yourself with small cocktails.
Only product we do not control the production of the raw material because the climate does not allow us.
The sugar cane molasses will be imported to the farm to be fermented at the distillery then distilled and finally bottled.
For this we will use different fermentation techniques (natural and yeast) with different fermentation times to express the best of our raw material: molasses.
- Aged Rum :
They will be aged in French or American oak barrels mainly but we intend to work well with other types of species in order to offer you a range of different products, complex and racy.
The range of old will include raw casks, assemblies, finishes, small lots, limited editions but also a range of old VSOP and XO but it will be necessary to be patient ....
- The Spicy:
Michael, a big fan of spices, will deliver a spicy, state-of-the-art spice that he designed with Maca Original Spiced Rum, that is, working only with fresh spices and no added flavors.
- Limited series
In our creative process, and in our search for new recipes, we will distil limited series at regular intervals, using seasonal products, to make you discover new flavors.
These series will have the advantage of renewing the range. These original recipes, aged or not, grain or other, malt spirit, liqueurs, they will be present to animate a thread within our team.
Our trio has every reason to come up with great things, a producer who loves his land, a well-known mixologist, and an epicurean, with his feet firmly on the ground to make the link. The recipes will be created with six hands, Olivier with the still, Michael with the "laboratory" and Antonin as justice of the peace. If Olivier and Antonin have known each other for 20 years, this trio is not made up only of "childhood" friends, which will also be able to say things in front, it will be important for the decisions to be made.

Why do we need you?
We have financed our Alambic Stupfler from our personal funds, which we have just received after two years of waiting, as well as all the development work on the premises of the distillery, which shows our investment in this project.
Level 1: 3000 €: This will allow us to equip our laboratory with glassware, stainless steel tables and other measuring instruments, and also to buy additional barrels in order to age and store more spirits requiring aging ( Rum and Whiskey).
Level 2: 9000 €: Thanks to you, you will be able to acquire a bottling solution to speed up the delivery of your bottles and also accelerate the expansion of our botanical garden and our orchard, in order to become as fast as possible -sufficient and master of all our ingredients
Level 3: 15000 €: Purchase of a professional labeler, renovation of a second space for an additional cellar in order to store more casks for aging
