<p><strong>&laquo; WAIT, THERE&rsquo;S WINE IN AUVERGNE? &raquo;</strong></p><p>This is probably the question that we have been asked the most those last two years when discussing our work in Auvergne. Yes, there&rsquo;s wine in Auvergne and it&rsquo;s incredible, even more so when it comes from winemakers as talented and respectful as the twelve ones presented in this book. We went to them so they could share their stories, their wine, their vision about their work and their everyday fight for a wine full of life. Our goal is to publish a beautiful book of 250 pages, embellished with great pictures and videos.</p><p>&nbsp;</p><p>&nbsp;</p><p><img width="100%" alt="" src="https://d3v4jsc54141g1.cloudfront.net/uploads/project_image/image/521925/ELV_Auv_KKBB7-1527770241.jpg" /></p><p>&nbsp;</p><p><strong>THE &laquo;&nbsp;BETWEEN THE VINES&nbsp;&raquo; CONCEPT&nbsp;: Let the winemakers tell it</strong></p><p>In 2016, me and my photographer friend Harry Annoni released our first book &laquo;&nbsp;Between The Vines: Burgundy&rsquo;s greatest winemakers share their stories, dreams and secrets&nbsp;&raquo;. This self-produced book was a way for us to let those who make the wine that we love so much tell it as they see it, without any restriction. It all comes from a simple idea: nobody talks about wine better than the winemakers themselves. The features give way to in depth conversations where the winemakers discuss their choices, their methods and their soil in full transparency. The reception to this first project has been so good that we have decided to go for another round.</p><p>&nbsp;</p><p><img width="100%" alt="" src="https://d3v4jsc54141g1.cloudfront.net/uploads/project_image/image/521924/ELV_Auv_KKBB5-1527770222.jpg" /></p><p>&nbsp;</p><p><strong>WHY TALK ABOUT NATURAL WINE WINEMAKERS?</strong></p><p>We chose to focus on 12 craftsmen who have decided to work with grapes and nothing more. The soil, the sky and the winemaker&rsquo;s care. No artificial additive, no AOC. They do it this way out of respect for the soil and out of love for quality products and a wine full of life, freed from chemical inputs. A wine full of emotion, that talks, that nourishes.</p><p>&nbsp;</p><p>Without sterilizing filtration and out of hand Sulphur additions, those wines get more precise, they get deeper too, both in texture and minerality. Therefore, the soil can truly express itself and make the whole journey way more exciting. That&rsquo;s where the incredible soils of Auvergne shine like no others. In such a mountainous region with the perfect climate for vine growing, the cuttings plunge their roots into the rich volcanic subsoil to extract unique flavors that never fail to impress. This short-lived experience has left its mark on a whole generation and its legacy can still be felt today.
