Deb's is above all the story of a young Indian man who traveled to Europe to discover other culinary cultures. After my studies at the Institut Paul Bocuse, he decided to pay tribute to his roots by opening his own restaurant in Lyon. Deb's is a House, a place full of stories. It is an open book in which we enter and taste India. The inspirations come from the everyday people I met, from all parts of India. My philosophy is a kitchen sharing and transmitting the experiences of the prople I met through the food. In my restaurant, I continue to explore the humble and surprising history of the rich Indian culture and make it accessible to all budgets
PROOF OF CONCEPT
Last year(9 feb 2018 –mar 2019) I worked as a head chef in a LE Dhaba in Lyon 7eme. I was the head chef and only chef working there . I designed ,created and served the entire menu which changed weekly very similar to the ones in DEB’S. the food was liked a lot by the Lyonnais and it was very welly appreciated. The reviews praising us was published in petit paume , petit fute , lyon city crunch. We also got nominated for the award of (best foreign cuisine restaurant in the area). Unfortunately my boss closed the restaurant as he wanted to move out of France. This is where I took the opportunity to create DEB’S
WHY A BISTRO?
The bistro creates a friendly meeting place that takes you to a little indian word. It can be a good yet simple meal on a weekday or a relaxed meal, tapas, drink or a brunch with friends or family on a weekend.
Deb’s puts forward indian cuisine in bistro formula. The menu is redesigned keeping the authensticity intact thus inviting you to taste the real indian food and having a wider customer panel than a classic indian restaurant
To get complete essence of the Indian bistro, DEB’S will propose a range of creative cocktails inspired from India with some local beers. Accompanied by some hot and cold bevarages like Chai tea ,coffee and Lassi its indian avatar
The kitchen that will be presented at Deb's will be the kitchen of chef and owner Debdutta Gupta. It is a traditional Indian cuisine, which will discover family dishes from all parts of India, more varied in flavor than the Europeanized cuisine we are used to. The colorful bistro cuisine of the chef has already proved itself at the Lyon restaurant Le Dhaba. As in the latter restaurant, the menu will change every week and will offer a short menu with meat or fish-based proposal and its vegetarian alternative. Allocation of funds
The picture above is of the current place which i plan for DEB'S. I would use the money raised by crowdfunding to realize my interiors. I plan to be minimalist and yet modern. I use techniques that respect the environment and save money. it is of the utmost importance that the interior has a warm, friendly and warm atmosphere, with the essence of narration and authenticity, for those who visit DEB'S.
