In the fourteenth century, you could hear screaming in the streets:
"That's the pleasure ladies, that's the pleasure!"
These pleasures were called the Oublies in our old French society. These biscuits named after them, because they are so light, that a moment after having eaten them, we no longer remember them, we forget them. They were usually tasted during the carnival, in the heart of winter.
Pleasure merchants humming: "Here is the pleasure ladies, that's the pleasure" carried their basket on their back, filled with biscuits and wandering the streets to even invite you to your home.
These pleasures have passed through the centuries, and the merchants of pleasure become merchants who develop their recipe more and more refined giving even more taste to these sweets.
... From where these pretty Escalettes with fragrant notes of lemon and cooked in the fire in their cast iron mold with atypical aesthetics.
Les Escalettes, from the waffle family, come from the Montpellier region. In Occitan, "Escaleta" represents a kind of flat and tiled waffle. The tradition of these biscuits continued with the pailhasses of Cournonterral where they were consumed with Cartagena and white wine even if this tradition has gradually been forgotten in the region.
Our love for ancestral cuisine, from our grandmothers and great-grandmothers pushes us to put a wrist, to light the fire to be able to feel again the sweet scent of hot waffle
L'Escalette de Montpellier represents our passion on the ancestral methods of manufacture, Lots of Love, the intransigence on the quality of the products but above all a Family Recipe transmitted from generation to generation and carried by Mamie Alix transmitted from generation to generation.
This delicate biscuit is a return to the sources and the authenticity. Its subtle taste immediately returns to our childhood memories, to the cooking flavors of our mothers and grandmothers, to whom we pay homage by respecting this original recipe for over 700 years! It is a call to guilt-free greed as the Escalette is light and full of good natural ingredients! The pleasure and that's it!

This collection is dear to our eyes as it allows us to maintain the ancestral manufacturing method and thus benefit more of our Escalettes.
Currently we make cookies in its original mold dating from the nineteenth century
This cast iron mold consists of two very attractive jaws but its production is limited.
The purpose of this collection is to be able to finance our new working tool, the famous, the ultimate:
A professional gas waffle maker
But not a simple waffle iron, a waffle iron with our cast iron molds made to measure the existing patterns of Old Time.

Assembly in our workshop, with bakelite rod and handles: 350 €

To date, the purchase of this waffle iron represents the largest budget of our investment at startup.
This step is ultimate in our launch and complex by its confection.
