MAISON NIPA - Ouverture de notre restaurant franco-philippin
Good day everyone! First of all, thank you for your interest in our fundraiser, and welcome to the MAISON NIPA project! We are Jason and Sharon Le Glatin, a Franco-Philippine couple that have been working in Michelin-starred restaurants for the past 10+ years (Alain Ducasse restaurants in Paris, Hôtel de Pavie 2* Michelin in Saint Emilion, Hibiscus 2* Michelin in London, Auberge de Bagatelle 1* Michelin in Le Mans…) and currently live in the French department of Sarthe (Pays de la Loire region, 2h30 by car from Paris). Sharon is a pastry chef and Jason is a chef, and it has been our dream to own and run our own restaurant in our image.
We are married and have two children: Maya (5 years old) et Yvès (1 month old).
📷 📷 📷 We are taking over a restaurant that dates back to 1897, a special place that is filled with history: "Auberge du Rallye", situated in the Fillé-sur-Sarthe community (an estimated 15km from the city of Le Mans). Fillé sur Sarthe is a community with a population of 1520 people in the southern sector of Le Mans. It is a charming little village where one can find the "île Moulinsart", a large 3 hectar park on the border of the river Sarthe. There is a 15th century Cyprus flour mill that is still working and produces three types of organic flour of which we will be using to make our restaurants bread. 📷 Our idea is to create a French gastronomic restaurant with Philippine influences, and thus the concept of "MAISON NIPA" was born. “Nipa” is the palm leaf material used to make the roofing of a traditional Philippine house (“Bahay Kubo”) and “Maison” is the French word for house. Maison Nipa will be a mixture of two distinct cultures and cuisines expertly configured with the “savoir-faire” of the French and the legendary hospitality of the Philippines. We want to create a new type of gastronomic cuisine fusion that is not present in France and keep clients wanting more by continuing to create exciting menus that change with the seasons. We also want to bring to light the flavours and culture of the Philippines. We will be practicing the concept of locavore where we can (working hand in hand with local farmers and producers) whilst practicing the idea of zero waste within the restaurant. 📷 We are lucky to be in a department that is widely diverse in terms of agriculture, being surrounded by most of what we would need in terms of produce within a 30 kilometer radius. 📷 📷 📷 Prospective opening date is start of March 2022! Help us create our Bar/Salon/Lounge space!
To complete the "Maison Nipa" experience, we need your help and support to finance the creation of our Bar/Salon/Lounge area:
We propose our guests to start their gastronomic experience with an aperitif, a glass of champagne or a cocktail. A long wooden bar will be installed where our guests can watch our barman confection their cocktails. We will source stylish comfortable armchairs and coffee tables that will add to pleasurable experience of tasting quality liquours, cocktails, hot drinks, and unique alcoholic beverages.
Within this space will also be a mini-epicerie that will showcase conserves and products created by us at Maison Nipa.
To achieve this bar/salon/lounge area, we are lacking a budget of 15 000 euros
1st step - 5000 euros
We can finance the arm chairs and coffee tables.
2nd step - 10,000 euros
Creation of the bar area by our local ebenist
3rd step - 15,000 euros
With this sum with can add our epicerie to the space and finace the totality of our project.
