Lume - Pastries that make you happy

My friends, my family, those I know a little and those that I don't know at all, please be most welcome. Your help will be invaluable to me. And I already say a huge "Merci" in advance. Please feel free to share! Who is Lume? LuME is a bit of me. It's the beginning of my three first names. And why "Petite pâtissière de rien du tout" (Little Pastry Chef of Nothing at All)? First of all it's a tribute to Anne Sylvestre (a french singer) and her little stories of nothing at all, which I grew up with and learned a lot from. Then it's also a way of saying that (almost) nothing is serious, that we are just passing through and that life is beautiful. But be sure that I will put my whole heart into making my pastries. My name is Lucy, and I'm 46 years old. I am a free and independent woman. I love travelling, swimming, playing in a batucada and constantly learning new things. I adore toucans, Sicily, people, and chocolate. I have been baking for as long as I've been allowed to use a kitchen, much to the delight of those around me. A few years ago, I obtained my pastry CAP (Certificate of Professional Aptitude) as a self-taught candidate while working as a childminder. After a lot of practise and an internship at a renowned pastry shop in Marseille, with discussions and encouragement from the chef, I made the decision to change my life and venture into whipped ganache, diplomat cream, and choux pastry. I am going to open my own pastry shop. To begin with, I will only work on orders: I want to produce only what is necessary and minimise waste as much as possible. I won't have a storefront but a laboratory that will also serve as a pickup point for you. I also wish to organize pastry workshops and share my passion with adults and children. I will offer both classic and creative pastries, using seasonal and preferably locally-sourced ingredients.

Allocation of funds

Of course, when embarking on an adventure like this, things never go exactly as planned. That being said, I am quite happy with how things have turned out. I will be the owner of my own premises. It is located in the neighborhood I had my eye on, the area of Rue de la Méditerranée in Montpellier (behind the train station if you're not familiar with it). I hadn't planned on buying a property. And naturally, I didn't anticipate having to redo the flooring, install all the electrical and plumbing systems, renovate the walls, and so on. In short, I'll have to roll up my sleeves (and get help from professionals). I'll have to start from scratch and set up a fully compliant professional kitchen. I have already obtained quotes, and the renovations should cost me between 10,000 and 15,000 euros. Your donations will help me finance a more or less significant portion of it. With 2500 euros, I'll have a floor. With 5700 euros, I'll have a floor and walls. With 8400 euros, I'll have a floor, walls, and electricity. With 10800 euros, I'll have a floor, walls, electricity, and plumbing. With more, I'll also have all the finishing details and unforeseen expenses. The purchase of small and large equipment was already included in my budget. As soon as the major work is completed, kind souls will be welcome to plaster, paint, sand, and engage in other joyful activities. Cakes, pizzas, beers, and good vibes are planned in exchange !
