GABY is a vegan hamburger restaurant that will open in the center of Paris in mid-July - hopefully :-)
Hello there !
But, first, who is this mysterious "Yvan", who wants to open a vegan burgers restaurant? [Between us, I am not sure that it interests anyone, hehe. but as this can contribute to the success of this crowdfunding campaign, let's go for it cheerfully! :-)]
I am a Parisian. Born at the edge of the Atlantic Ocean in a medium-sized city named La Rochelle, thirty-nine years ago [quite a nice place to visit for a few days, by the way ;-)]. I moved to Paris as a business management student. I started working as a bank employee. Then in 2012 created a head-hunting business. But for a year and a half now, I only have ONE idea in mind: to open a vegan burger fast-food.
Yes, well, sounds cool..., but "why"?
Well, it's probably because of a combination of factors. I mean, is it because in 2003, when I was passing by the city of Bloomington, IL (USA), I tasted my first vegan hamburger (delicious burger, I still remember the perfect patty and slices of fresh red onions)? Is it because I enjoy cooking very much? Or is it because I like to eat with my hands? :-) It's probably more because I was born into a vegetarian family. Thus, through rewarding meetings with other veggie-like-minded people :-) I decided for about 7 years to adopt a vegan diet, then in 2016 moved to a vegan lifestyle.
This choice also comes from my desire to align my professional life with my personal ethics. As you have understood, it is important for me that my activity reflects my values.
So, GABY will be a vegan restaurant, with a sound eco-logical base.
Okay, now we understand why Yvan wants to open this restaurant. [And, thanks again for reading, by the way ;-)]
But the customers, why would they come to eat burgers in this restaurant rather than another, huh?
Well, firstly you have to know that:
> Our products are homemade, from raw organic origin, and according to the rhythm of the seasons. No GMOs, no pesticides, no artificial flavors or colorings, no preservatives, and 100% organic, including drinks.
You will live happier and longer! :-)
> Also, environmental impact is reduced, with local sourcing and as much as possible recycled items.
But, in addition... you dreamed of it:
> You can customize your burger, with your own choice of ingredients, sauces and condiments! Hmmmmm... yummy!!

REPORT ON THE PROGRESS OF THE PROJECT
I took possession of the premises in March. With the help of my architect and interior designer, Hélène Guillou, we are finishing the work and we are starting the decoration. We finished laying the tiles :-) The electricity is almost over. It remains to arrange the kitchen.
I have already purchased :
2 refrigerated towers type "saladette" 2 doors. 1 cold cabinet. 1 wine cellar cabinet. 2 hotplates. 1 oven. 1 plancha "grill". 1 bun toater. 1 veggie-cutter.
Most of the project is already funded. There is still about 10% to "find". But it's a lot of money! That's why I dream of a little helping push :-)
Most recipes are ready. It remains to implement them on a larger scale :-)
We already have some of our suppliers. For vegetables, they are passionate organic farmers in the Paris region. The quality of their products is really great!
For hamburger buns, there are the bakeries nearby. Their customised bread is perfect! :-))

ANSWERS TO SOME FREQUENTLY ASKED QUESTIONS (FAQ):
Question: What is the expected opening date?
Question: Is there a fee for the delivery of the counterparties?
Answer: Delivery is free.
Question: Can I order multiple counterparties?
Answer: Yes, for that you will have to enter the total amount of the counterparties, and to tell me the detail of the counterparties that you want.
Allocation of funds
Here is the neighbourhood where you will come to visit us and taste "THE Hamburger" :-)
The funds will be used mainly to finance the purchase of equipment, such as an oven, a "plancha", a toaster, vegetable cutters and fruit processors, etc.
I will collect the funds and return these to the company.
Here is my budget for the material I miss in detail up to date for June 20, 2018:
1 second cold cabinet 700 € (if used: 350 €), 1 cabinet of fermentation 600 € (if of occasion: 250 €), 1 beater used 700 € 2 fries heaters 600 € 1 balance used 200 € other small equipment 1000 € 1 patty-former 500 €
Total equipment if I buy brand new: 4 300 €
Total equipment if I buy used all those who can be: 3 100 €

Well, but in fact it's not over :-)
I still have to pay part of the work:
electricity balance 949 €
budget estimate Ventilation € 3,882
budget estimate Closets 3,720 €
So 8 551 € more in total.
As much to say to you that for the ventilation and the cupboards it will be necessary to find a less expensive solution ;-)
So I do a lot of things with the help of my friends [I would never thank them at the height ... but what gratitude I have for them!], And with my little hands :-)
But what would happen if the sum collected was to exceed € 5,000?
If the amount raised exceeds € 5,000, it will help me finance construction works in a more suitable way, and to buy better quality equipment :-)
