"But dude... why don't you open your own pastry shop?!" This phrase, which I heard so often, kept running through my mind... My name is Jonathan Salomon, and my passion for cooking and pastry dates back to my childhood. Today, I’m ready to fulfill a dream that’s particularly close to my heart: opening my own pastry shop. My concept is both simple and ambitious: to launch a pastry shop that will operate exclusively by order (at least initially). By producing only what is necessary, I commit to reducing waste while ensuring that my creations are always fresh. At the start, I will have a laboratory that will also serve as a pickup point for your orders. I will offer refined and elegant pastries, made with high-quality, seasonal, and, whenever possible, local ingredients. Each cake will be fully customizable to perfectly meet your desires and tastes. Whether it's for a special occasion or just a simple indulgence, my creations will combine exquisite flavors with meticulous presentation, providing you with an unforgettable culinary experience. In the long term, I plan to expand my business to include a sales counter, similar to a traditional shop, where you can discover and purchase my pastries directly on-site. At the same time, I will host pastry workshops to share my passion with you and help you refine your skills. With your support, I can embark on this beautiful adventure and make my dream come true. My passion, my project ! The adventure began for me in 2018 when I decided to go back to school to become a pastry chef. After completing my training in 2021, I had the opportunity to work in Brussels renowned establishments such as 'La Fleur du Pain,' 'Le Saint Aulaye,' 'Ginkgo,' and 'Hopla Geiss.' These experiences allowed me to discover the realities of the profession and to perfect my techniques. While studying, I launched my Instagram page in 2021, where I shared some of my creations. Given the enthusiasm and positive feedback, I continued to develop this platform, eventually creating a full "menu" of my products with a loyal and enthusiastic clientele. Today, the time has come to take the next step. My goal is to offer my creations to a wider audience by opening my own workshop. Allocation of funds

The fundraising will enable me to bring my project to life by financing the purchase of the necessary equipment to create high-quality pastries. It will also help cover the costs of setting up my workshop, which will serve both as a production space and a pickup point for your orders. With your support, I will be able to create a professional environment tailored to my ambitions, where every detail is considered to offer you the best creations possible. Here’s a glimpse of the space I have in mind. As you can see, there is a lot of work to be done... Your contribution is therefore essential to bring this project to life and make my pâtisserie a reality. The renovation work is estimated to cost between €10,000 and €15,000: flooring, walls, electricity, plumbing, insulation, air extraction.
