We are two Slovak girls who came and fell in love with Paris in 2006. After our studies in one of the business schools, and after a few years of professional experience in the white collar world, our passion for healthy eating and well-being brings us to 112, rue Saint-Maur, the future location of our café.</p>

Thank you, my deer is a gluten free café, which offers homemade bread and cakes made with the best natural ingredients without any artificial preservatives. Our café serves hot beverages, fresh fruit and vegetable juices as well as drinks made of superfood (such as chia seeds or goji berries) to accompany sandwiches, salads and waffles.</p>

<strong>Our goal</strong> is to allow gluten intolerant and sensitive people as well as their friends and family, to enjoy homemade freshly prepared, healthy and tasty dishes. </p>

Today, 3 % of the French population deals with some sort of food allergy. 1 % of the population suffers from gluten intolerance, that makes around 60 000 people declared intolerant to gluten. However, estimates suggest that 600 000 are sensitive to gluten. According to these figures, there is approximately 100 000 people who would benefit from gluten free foods in the region of Ile-de-France alone. In addition, a gluten free diet is a developing health trend that is taking off worldwide and is being promoted by big celebrities such as Novak Djokovic or Victoria Beckham. </p>

Once a niche market, gluten-free diets have become an important and growing business. It represents 2 billion USD in the US. Compared to the Anglo-Saxon countries, the current offerings in France doesn’t correspond to demand. Homemade and freshly prepared food that considers gluten content, is almost non-existent. And that is why we hope you will all stop by and say...Thank you, my deer.</p>

Allocation of funds
<p>
Today, our project is launched with a signature of rental contract and we are seeking to complete our investment. Our current budget allows us to furnish the interior and equip our kitchen. We need your financial help to buy high performing and eco appliances, namely:</p>

- <strong>a convection oven</strong> with laminar airflow and moisture injection, which consumes less energy and ensures the best quality of production (2 000 euros)</p>
<p>
- <strong>professional coffee machine</strong> for the finest quality coffee (1 000 euros)</p>

<strong>What happens if we exceed our objective of 3 000 euros thanks to your generosity?</strong> We will be able to create even cozier atmosphere and invest to increase the comfort of seating. </p>
